His early career saw senior roles at Conran Restaurants and Ian Schrager Hotels. He managed Mezzo—London’s largest restaurant—and helped launch the Great Eastern Hotel, laying the foundation for a career in innovation and hospitality.

At TGP International, Simon has led diverse projects across Europe, the Middle East and Asia.
He is a trusted advisor to hotel groups, developers and public clients, positioning F&B as a vital asset in tourism, placemaking and destination strategy.

Notable work includes Abu Dhabi’s award-winning Seed & Bloom Café, now a vibrant hub for community/social events. Simon also grew TGP’s Events & Catering, delivering F&B for Coldplay, the Dubai World Cup, Abu Dhabi Grand Prix and the Elrow Festival.
